Sugar free cocoa dessert recipe
This sugar free cocoa dessert recipe is a winner for a guilt free after dinner treat. Nutritionalist Paul Foley shares his wonderful recipe here. A perfect option as a healthy dessert, snack or lunchbox treat.
COCOA FLAX PUDDING
½ cup (60 g) flax meal (for best results, grind whole flax seeds in a coffee grinder or a high-speed blender)
1 tblsp of chia seeds
¼ cup (20 g) cacao powder
Sweetener to taste (stevia extract or 2 tablespoons (40-60 g) maple syrup will work too)
optional: ½ teaspoon cardamom
1 cup (240 ml) almond milk (or other milk of choice)
pomegranate seeds of 1 pomegranate or any other fruit you fancy for the topping.
Combine all ingredients except for the pomegranate in a medium bowl (sweeten to taste).
Leave to stand for 15 minutes
Serve the pomegranate on top or any other fruit or nuts you fancy. I always enjoy changing the serve ware to make it look beautiful and feel like a real treat.
Will keep for 2 days in the fridge.
